-1kg (2¼lb) king prawns, shelled and deveined

-150g (5oz) butter -100g (3½oz) plain flour -600ml (21fl oz) milk -75g (3oz) Cheddar cheese, grated -Salt and black pepper -50g (2oz) fresh white breadcrumbs -30g (1oz) Parmesan cheese, finely grated

Method: 1. Preheat the oven to 200C/400F/Gas 6. Butter an ovenproof dish. Mix the flour and milk together in a pan until smooth, then bring to a boil, stirring constantly. Add the Cheddar cheese and seasoning to taste. Remove from the heat and pour over the prawns in the ovenproof dish. Mix together the breadcrumbs and Parmesan cheese, sprinkle over the top of the prawns au gratin, and bake for about 15 minutes until golden brown on top. Serve with lemon wedges or slices of baguette if desired.

1 tablespoon olive oil 1/2 onion, chopped 1 cloves garlic, minced 1/4 teaspoon salt 1/4 teaspoon black pepper 8 ounces mushrooms, sliced 1-1/2 cups half and half 3 tablespoons all-purpose flour 1/2 cup grated Parmesan cheese 2 tablespoons chopped fresh parsley 4 cups cooked prawns (about 1 pound) Instructions:

1. Preheat oven to 350 degrees F. Grease a 13x9 inch baking dish with the olive oil.

# 2. In a large skillet, heat the garlic over medium heat until fragrant. Add the onion, salt and pepper. Cook until the onion is soft, about 5 minutes. Add the mushrooms and cook until tender, about 5 minutes more.

# 3. In a small bowl whisk together the half and half and flour until smooth. Add to the mushroom mixture and bring to a simmer, cooking until thickened, about 2 minutes. stir in Parmesan cheese and parsley.

4 Spread the mixture into the prepared baking dish,. Top with cooked prawns.. Bake for 20-25 minutes or until heated through and bubbly
