Seafood Au Gratin - Prawns, scallops, and crab in a cheesy sauce!

This recipe for seafood au gratin is always a big hit with my family. We love all kinds of seafood, and this dish combines our favorites into one amazing dish. The cheesy sauce is delicious, and the combination of seafood is really mouth-watering.

To make this dish, you will need:

1/2 cup butter 1/2 cup flour 3 cups milk 1 1/2 teaspoon salt 1/4 teaspoon white pepper 1 (10 3/4 ounce) can condensed cheddar cheese soup 1/2 cup grated Parmesan cheese 1 1/2 cups shredded Monterey Jack cheese 2 tablespoons dried parsley flakes 1 tablespoon lemon juice 1 (8 ounce) package medium size cooked prawns, peeled and deveined 1 (6 ounce) can small white crabmeat, drained 1 (6 1/2 ounce) can bay scallops, drained 8 ounces uncooked vermicelli pasta*

make the sauce first: In a large saucepan melt butter over low heat. Add flour, stirring until smooth. Gradually add milk; cook over medium heat until mixture thickens and boils. Boil and stir 1 minute. Add salt and white pepper. Add soup; simmer 5 minutes or until slightly thickened. Stir in Parmesan cheese, Monterey Jack cheese, parsley flakes, and lemon juice; set aside.

In a greased 13x9 inch baking dish place half of the vermicelli noodles. Top with all the seafood mix ingredients reserving some of each for later on top. Cover with remaining noodles then pour sauce over all making sure everything is coated well. Sprinkle reserved seafood on top and bake uncovered at 350 degrees for 30 minutes or until bubbly hot and cheese is melted

Crab and Prawn Gratin Recipe

Ingredients: - 500g green king prawns, peeled - 1kg live blue swimmer crabs, cleaned - 250mL white wine - 1 brown onion, diced - 2 cloves garlic, minced - 1 leek, white part only, sliced - 50g unsalted butter - 2 tablespoons plain flour - 250mL milk - 125mL cream -lemon wedges to serve Wine Pairing: Chablis Premier Cru or Sancerre Blanc

Crab and Prawn Gratin Recipe instructions:

  1. Preheat oven to 220°C (428°F). Grease a large baking dish.
  2. In a large saucepan, bring the wine to a boil. Add the prawns and crabs and cook for 2–3 minutes until cooked through. Remove with a slotted spoon and set aside. Discard the poaching liquid.
  3. In the same pan, melt the butter over medium heat. Add the onion, garlic and leek and cook for 5 minutes until softened. Stir in the flour and cook for 1 minute. Gradually whisk in the milk and cream and bring to a simmer. Cook for 4–5 minutes until thickened. Season with salt and pepper to taste. Return the prawns and crabs to the pan and toss to coat in the sauce. Transfer to the prepared baking dish.
  4. Bake for 15–20 minutes until heated through. Serve with lemon wedges on the side if desired

Instructions:

Preheat oven to 400F (200C).Brush an 8x8 baking dish with olive oil.Heat the oil in a large skillet over medium heat. Add the onion, garlic, thyme, smoked paprika, cayenne pepper (if using), and mushrooms. Cook until the mushrooms are softened, about 5 minutes.Add the fish stock or clam juice and prawns. Cook until the prawns are cooked through, about 3 minutes.Pour the mixture into the prepared baking dish. Sprinkle with Parmesan cheese.Bake for 10-12 minutes until heated through and the cheese is melted and bubbly.Serve hot. Enjoy!

In a large frying pan, sauté the onion and garlic in butter until softened. Add the prawns and cook until pink. Pour in the white wine and simmer for 2 minutes. Remove from heat and set aside. 2. In a separate saucepan, melt the butter and stir in the flour until a paste forms. Gradually whisk in the cream until thickened, then season with salt and pepper to taste. 3. Preheat oven to 200°C (400°F). Grease an ovenproof dish with butter or cooking spray. Layer the prawns, crab meat and sauce in the dish, finishing with a layer of sauce on top. Sprinkle with chopped parsley and bread crumbs. Bake for 20–30 minutes or until golden brown on top. Serve hot!
